I think we mean sauerkraut. Horseradish comes from that root vegetable. On the notes I took while at Steamtown (thank you again Pat) I wrote "cabbage plant". Alas I can't find the plant (sauerkraut factory), only the cabbage houses. Probably I was mistaken in my notes.
