I would too, but we probably won't be able to. The commuter service won't have diners. During the various hearings about the service, I strongly suggested that NJT plan to have a caterer serve food on the peak hour trains, probably only between Scranton and Dover. Don't know if they will listen... Otherwise, breakfast MAY be available at the stations or nearby restaurants, to go.
As to enjoying the scenery, consider this:
To reach a NYC job at 9 am, the commuter will leave Scranton about 6 am and even East Stroudsburg before 7 am. For much of the year, it will be dark at those hours. Not as bad on the return trip. Many commuters will probably be sleeping, especially in the morning.
